The present invention is directed to a process for preparing structured polymer matrices using two or more simultaneous multiple acervation mechanisms. In addition, the methods described herein provide a flexible process for forming the structured polymer matrix from almost any combination of polymers, preferably but not limited to food polymers. Simultaneous application of these two or more abortion mechanisms, unexpectedly, provides new matrices with improved tissue and / or process efficiencies that are superior to the polymer matrices produced by the abortion mechanisms performed individually or sequentially. |
