abstract |
A method for preparing the cookie or snack by using rice, and the cookie or snack prepared by the method are provided to remove the tough taste of a rice flour and to prepare the cookie or snack simply without complex pretreatment. A method for preparing the cookie or snack by using rice comprises the steps of adding glutaminase to a rice flour; and making cookie or snack by using it. Preferably the glutaminase is transglutaminase, and the amount of transglutaminase is 0.001-1.0 parts by weight based on 100 parts by weight of a rice flour. Preferably the rice flour is prepared by pulverizing rice into a particle size of 160-240 mesh. |
