abstract Storage-stable liquid base compositions useful for preparing acidified milk based beverages, for example by dilution with water in a beverage dispenser, include: about 2 to about 10 weight of denatured milk protein expressed as a solid free (SNF) dairy component %; About 15 to about 80 weight percent of a carbohydrate-based or non-carbohydrate-based sweetener expressed as a sugar equivalent; Carbohydrate based stabilizer about 0.35 to about 1.50 weight percent; And an acidifying agent present in the amount necessary to achieve a pH of the base composition from about 3.0 to about 3.8. Methods of making such base compositions, and acidified milk based beverages prepared by such base compositions.
