abstract | A method for preparing the noodles by using buckwheat, and the noodles prepared by the method are provided to improve elasticity and sticky property. A method for preparing the noodles by using buckwheat comprises the steps of pulverizing buckwheat into a size of 120-150 mesh; pasting the pulverized one with 50-70 % of purified water for 5-10 min, putting it in a container and covering it; heating the container containing buckwheat at a temperature of 70-120 deg.C for about 5-25 min; and extruding the heated one. |
