abstract |
The present invention provides a vegetable sterol-containing milk beverage which is capable of emulsifying vegetable sterols stably for a long period of time during storage and excellent in quality retention and stability. The vegetable sterol-containing milk beverage is characterized by containing an emulsifier of at least one of vegetable sterols, milk components and (a) organic acid monoglycerides and casein sodium, or (b) microcrystalline cellulose. It may also contain at least one selected from the group consisting of sucrose fatty acid esters, xanthan gum, native gellan gum and carrageenan. |
