abstract Disclosed are a method for selectively producing sikonin from lichen root or lichen root extract using fatty acid degrading enzyme, and a method of using the same. The present method is to selectively produce only siconin by removing acyl groups of siconin derivatives by treating esterase, which is one of fatty acid degrading enzymes, with the herbaceous root or the extract of herbaceous root. According to this method, by selectively producing siconin from siconin derivatives, pigments with higher polarity, brighter color and less cytotoxicity can be easily produced from the ground, and can be used in various fields such as food, pharmaceuticals, etc. There is an effect that can be useful in the field.
