The present invention relates to a sugar transferase derived from Sulfolobus solfataricus , and a method for producing a branched cyclodextrin using the same, and particularly, to a heat-resistant glycotransferase derived from a sulfur transferase, which is the sugar transferase of the present invention. When used, dimaltosyl-beta-cyclodextrin with increased water solubility can be prepared from maltosyl-beta-cyclodextrin, which is very useful industrially. |
