abstract |
The method of producing alpha-amylase resistant starch includes extruding feed starch at a temperature in the range of approximately 60-220 ° C. to produce alpha-amylase resistant starch. This feed starch may be in the form of an aqueous slurry or paste having a dry solid concentration of at least 50 wt.%. This method may further comprise heating the resulting starch to a temperature of at least 90 ° C. in the presence of moisture to further increase the alpha-amylase resistance of the product. |
