abstract The present invention relates to a process for preparing a dairy component which is particularly suitable for use in making cheese. The method includes forming protein concentrates and whey from dairy streams. The streams can be selectively separated, and different conditions / reactants are each used in a separate stream to modify the exported protein prior to recombining the separation stream. Protein concentrates are dissolved prior to recombination with whey. Monovalent and divalent cation contents of the protein concentrate can be adjusted by dissolving the protein concentrate. The prepared ingredients can be used to make cheese products.
