Provided are yeast extracts having higher 5'-ribonucleotide and amino acid contents than conventional ones and methods for making the same.n n n The edible yeast was treated with an acidic aqueous solution and centrifuged to wash the precipitates with water, followed by contact with actinomycetes-producing yeast, at least 24% by weight of 5'-inosinic acid and 5'-guanylic acid, at least 20% by weight of peptides and peptides. And a free amino acid were combined to prepare a 5'-ribonucleotide high yeast extract containing 28% by weight or more. |
