abstract The present invention relates to a method for producing soya milk using soybean, characterized in that the mixture containing soybean is used with alkaline water (alkali water) having a pH of 7.5 or higher or an alkaline additive is added to the water. In order to further enhance the effect of alkaline ionized water, it is a method of manufacturing soymilk in a process including a step of indirectly heating and treating the hot water circulation by steam heating of the alkaline ionized water in any step of the production. In addition, in the method for producing soymilk according to the present invention, the alkaline water is crystalline in the first step and each obtained ionized water by electrolytic treatment of raw material water in which crystalline clay mineral is dissolved to produce alkaline and acidic ionized water. Soymilk can be prepared by dissolving clay minerals and supplying alkaline ionized water stably over a long period of time with ionized water produced by the second step of electrolytic treatment by supplying each ionized water to a predetermined electrode side. Furthermore, the alkaline soy milk according to the present invention by the manufacturing method capable of supplying the alkaline water in a stable manner is a device for producing alkaline ionized water, a device for steam heating the alkaline ionized water thus made, and purified soy milk raw material with the steam heated hot water.
