The present invention relates to an acidic composition of at least one organic acid blended with an acidifying agent. The acidifying agent may be a poorly soluble Group IIA complex (“AGIIS”), a strongly acidic metallized organic acid (“HAMO”), a strong acidic metalized inorganic acid mixture (“HAMMIA”), one or more inorganic strong acids or acid salts. Acidic compositions are bacteriostatic preservatives effective against pathogenic microorganisms that may be present in food. Contacting raw meat, such as Frankfurt sausage, as well as livestock products, with the acidic composition reduces the number of microorganisms detected for an extended period of time. |
