abstract | According to a first aspect, there is provided a process for the preparation of a protein free product comprising free amino acids and short peptides, wherein in order to obtain the desired product, the raw material is ground and hydrolyzed with endogenous enzymes and coagulation of protein residues is carried out. It is delivered through different separation processes, including. The present invention further encompasses the products obtained above and their uses. According to a second aspect, protein products rich in free amino acids and short peptides are prepared, wherein the raw protein material is ground and hydrolyzed with endogenous enzymes, where the hydrolyzate undergoes various separation processes. The product obtained comprises proteins, short and long peptides, free amino acids and minerals, and has a low fat content and salt content. According to a third aspect, hydrolysis of protein-containing raw materials and separation of amino acids / peptides are performed, wherein hydrolysis is carried out by using endogenous enzymes of protein-containing raw materials. The hydrolyzate is passed through a membrane filter, where the peptide / amino acid follows the permeate stream and the active enzyme continuously degrades any protein residues deposited on the membrane surface. The enzyme is returned to hydrolysis along with the dialysate. In addition, amino acid and peptide products and oil products are described and their use is disclosed. |
