abstract | The present invention relates to a method for removing cholesterol from cheese, and more particularly, to a method for removing cholesterol from cheese by adding beta-cyclodextrin to a cream separated from crude oil and homogenizing the same.n n n In the present invention, in preparing cheese using crude oil, cream and skim milk are separated from the sterilized crude milk, beta-cyclodextrin is added to the separated cream to remove cholesterol, and then homogenized with the separated skim milk to make the cheese.
