abstract | The present invention is directed to a method for decreasing the viscosity of an aqueous polysaccharide composition comprising combining an aqueous composition with a non-aqueous viscosity lowering agent. Specifically, it relates to a method for decreasing the viscosity of an aqueous carbohydrate gum composition. In particular, it relates to a method for decreasing the viscosity of an aqueous polysaccharide composition comprising combining the polysaccharide composition and a viscosity lowering agent in an amount effective to form a biphasic system. Also included are products prepared according to the methods described above. It also relates to an aqueous composition comprising a polysaccharide and a non-aqueous viscosity lowering agent having a water content of at least about 40% by weight of the composition. Further, it relates to an aqueous composition comprising a polysaccharide and a non-aqueous viscosity lowering agent, wherein the viscosity of the composition is reduced by at least 10%. A method of redissolving a solid oxidized carbohydrate gum comprising combining an oxidized carbohydrate gum and an aqueous solvent under conditions effective to provide a redissolved composition with a pH of less than about 7. |
