abstract | The present invention relates to a method for producing green nutritious sprouts using yellow light, a method for producing a functional beverage using green nutritious sprouts produced by an electric method, and a functional beverage prepared by the electric method. The method for producing green nutritious sprouts of the present invention includes a step of germinating bean sprouts immersed in water under the condition of continuously irradiating yellow light, and developing the sprouted bean sprouts. According to the present invention, since green nutritious sprouts produced using only yellow light contain nutritious constituents and isoflavones similar to those of green nutritious sprouts produced by conventional methods using multiple stages of monochromatic light, it is economical to produce green nutritious sprouts. In addition to producing a functional beverage using electric green nutrient sprouts, it may be useful for ingesting isoflavones, which are known to be effective for anticancer, anti-osteoporosis, cholesterol lowering, hypoglycemia. |
