The present invention relates to a method for reducing the molecular weight of red ginseng active ingredient to increase the antioxidant activity of red ginseng by treating the red ginseng extract with a specific enzyme.n n n Low molecular weight method of the red ginseng active ingredient according to the present invention by extracting the hot water with red ginseng with water hydrolysing enzyme, any one selected from cellulase, galactosidase and glucosidase 0.01 to 0.01 By adding 0.1% by weight, the active ingredient in red ginseng is made low through enzyme activation and enzyme inactivation.n n n According to the present invention, by adding a specific sugar hydrolase to the red ginseng extract, it has an effect of significantly increasing the antioxidant activity of the red ginseng by lowering the active ingredient in the red ginseng. |
