abstract | Foreign body removal and microorganism removal of carcass surface in slaughterhouse and slaughterhouse are very important for food hygiene. The present invention is effective cleaning of carcase surface applying conventional high pressure washing water spraying method to carcass surface and carcase surface with acidic water which is commonly known electrolytic ion water. It is a method to remove foreign substances on the surface of the carcass and to remove microorganisms such as using chemical disinfectant.Then, high-pressure washing water is sprayed on the outer surface of the carcass and the inside of the body cavity by hanging with a shackle to wash the carcass. This operation is sprayed with high pressure water on both sides of the conductor movement line, and at the same time, the attachment of the high-pressure injector enters the conductor cavity to clean the inside of the conductor cavity. Entering the Chilla (Conductor Chiller with Cooling Water) Repeating the above washing twice before and after exiting Chilla, it shows the effect of reducing microorganisms. After cleaning after carcase exiting Chilla, the final step of the present invention is spray spraying with acidic water, which is common electrolytic ion water. By creating a PH environment that is inadequate for microbial growth, the carcase surface can increase the microbial reduction effect and preservation of the carcase. |
