abstract The present invention relates to a method for producing a low viscosity glucomannan composition by mixing a viscosity reducing compound with a glucomannan under conditions suitable for forming the low viscosity glucomannan composition. The ability to adjust (increase or decrease) the viscosity by combining glucomannan with compounds of different molecular weights is described. Also described are methods for reducing blood glucose and cholesterol in mammals by administering a therapeutically effective amount of the maltodextrin-glucomannan complex. In addition, a method of converting a food or beverage product from an initial low viscosity material to a high viscosity end product is described.
