abstract The present invention relates to a KSC-2C / pYESINU2 ( Saccharomyces cerevisiae KSC-2C / pYESINU2) strain and a recombinant endoninase produced therefrom that produce a large amount of endinulinase. Recombinant Saccharomyces cerevisiae transformed with an endonininase expression vector to the KSC-2C / pYESINU2 (KCTC 8996P) strain was added to 2 glucose-supplemented fructose, and then recombined. There is an excellent effect of efficiently expressing and secreting endonininase and mass production, and also using the recombinant endonininase, an oligosaccharide having a low sugar and glucose content can be produced.
