abstract | Fresh Fruits Provides a method for preserving fresh fruits using fresh preservatives that extend the shelf life of freshly cut fruit. Fresh fruit preservatives preserve the texture, fragrance, shape, crispness and color of fresh fruits, especially the exposed epidermis of fresh fruits. The method provides a fruit preservative solution comprising water, calcium ions and ascorbate ions, wherein calcium ions to ascorbate ions are present in an ion ratio of 1.5 to 1 to 2.5 to 1 and applying them to the fruit. It includes. Preferably the fruit is then stored at a temperature such that the fruit does not freeze, and the apple does not freeze at -6 ° C.
