abstract The present invention provides a hybrid polypeptide having an encapsulation region from a gene encoding an assimilation protein. In particular, the present invention relates to recombinant nucleic acid molecules encoding genes that encapsulate proteins attached within a substrate, which genes encapsulate the desired (payload) polypeptide in starch, in particular in starch particle substrates. Also provided are expression vectors comprising such recombinant nucleic acid molecules, and their hosts, in particular starch-containing portions of said host transformed by such vectors. Preferably, grains containing foreign proteins encapsulated in starch are provided, which are useful for preparing food for mammals, fish and birds. The present invention also encompasses methods of making purified proteins from starch, in particular starch particles, and the industrial use of such proteins.
