titleOfInvention Soluble Espresso Coffee
abstract The present inventionn n n (1) foaming the coffee extract by gas injection,n n n (2) homogenizing the foamed extract of step (1) to reduce the bubble size to 5 microns or less, andn n n (3) in a cup comprising spray drying the homogenized extract of step (2) at a dryer outlet temperature and spray pressure conditions effective to produce a soluble espresso coffee powder with a majority of voids in the powder consisting of bubbles of size less than 10 microns. A method of making soluble espresso coffee powder with improved foam.n n n The soluble espresso coffee powder obtained here, when burned with hot water, produces bubbles similar to the foam formed from espresso made from roasted and ground espresso coffee.
