abstract | An object of the present invention is to provide a method for preparing roasted sweet potatoes that can minimize the leakage of moisture from the inside of the sweet potato when thawing for ingestion, thereby maintaining the same taste, aroma and texture as that of freshly baked sweet potatoes. The present invention for this purpose is a heating step of heating the sweet potato to make roasted sweet potato; A quick freezing step of freezing the heated roasted sweet potatoes at a temperature of -35 to -45°C for 20 to 40 minutes; and a packaging step of packaging the quick-frozen roasted sweet potato. |
