abstract The present invention relates to a method for processing kenaf seeds for increasing the content of soluble flavonoids and polyphenols and a processed product thereof, comprising the steps of mixing the kenaf seed powder of the present invention with a biopolymer and performing thermal melt extrusion; The kenaf seed processed by , has relatively smaller particle size and higher formulation homogeneity and stability than kenaf seeds that have not been subjected to hot melt extrusion. In addition, the soluble flavonoid and polyphenol content of the kenaf seed processed product was superior to that of the heat melt-extruded kenaf seed powder alone, and the antioxidant effect was enhanced. It has the effect of preventing damage to and obtaining an optimized extraction result. Therefore, the processed kenaf seed of the present invention can be usefully used as a material for a food composition with enhanced antioxidant effect.
