abstract The present invention relates to a method for determining the origin of shiitake mushrooms using a stable isotope ratio, and more particularly, to a method for discriminating dried shiitake mushrooms made in Korea and China using stable isotope ratio analysis of nitrogen, carbon, oxygen and sulfur in dried shiitake mushrooms. About. In the present invention, when the isotope ratio of carbon, nitrogen, oxygen and sulfur was measured for dried shiitake mushrooms produced in Korea and China, each isotope index was calculated, δ 15 N, δ 18 O and δ 34 S of dried shiitake mushrooms. It was confirmed that the values, especially δ 15 N and δ 18 O values, showed a significant difference according to the country of origin, and the country of origin determination model using OPLS-DA analysis showed excellent predictability (Q2 = 0.892) for the determination of the origin of dried shiitake mushrooms. Since it has been confirmed that it is visible, it is possible to provide a more accurate and standard country of origin determination criterion of shiitake mushrooms using the method of determining the origin of the shiitake mushrooms provided by the present invention.
