The present invention relates to the use of a compound of formula (1) or an edible salt thereof in an edible composition for masking or controlling unwanted taste or off-taste contained in an edible composition: [Formula 1] Where R 1 is an alkyl residue comprising 6 to 20 carbon atoms, or an alkene residue comprising 9 to 25 carbon atoms and 1 to 6 double bonds, and R 1 together with the carbonyl group attached thereto forms a carboxylic acid residue and; NR 2 R 3 is an amino acid, in particular a proteinogenic amino acid, ornithine, gamma-aminobutyric acid or beta-alanine, or a 1-amino cycloalkyl carboxylic acid residue, wherein R 3 is H; R 3 , R 2 and the N-atom to which they are attached together form a five membered ring. |
