The present invention provides a method for preparing a water-in-oil (W / O / W) emulsion containing hard enzyme modified starch gel and increasing the light stability of the retinol contained in the oil, without using additives or chemical treatment. It can be a great help in the food, cosmetics, and pharmaceutical industries, which require environmentally friendly products by dramatically increasing the light stability by using the entrained starch in the particle and enzymatically modified starch without physicochemical treatment. |
