abstract | The present invention relates to an anthocyanin-rich new variety wheat and a breeding method thereof, and more particularly, to an anthocyanin-containing high-anthocyanin whey composition comprising anthocyanin Containing new wheat. The new variety of wheat 'health' of the present invention has an antioxidant-related functional substance anthocyanin content 12 times higher than that of 'Woori' wheat, so that nutritional and functional properties can be enhanced and utilized in various food processing utilizing whole wheat bread or wheat bran. Therefore, high-value-added functional wheat 'health' can be utilized not only for profit of production farmers but also for milling industry to processing and distribution companies through expansion of wheat cultivation area. It can make a great contribution to the improvement of domestic self-sufficiency rate. |
