abstract | The present invention provides novel strains of Lactobacillus paracasei and uses thereof. The Lactobacillus paracasei strain according to the present invention can be safely used as a foodstuff, and it is also possible to use ginsenosides Rb1, Rb2, Rc, Rd, Re or Rg1 which are major saponins contained in ginseng as ginsenosides Rg3, Rh1 or Rh2. Therefore, the fermented ginseng extract having a relatively increased content of Rg3, Rh1 or Rh2 can be prepared using the Lactobacillus paracasei strain according to the present invention. |
