abstract To a process for the production of oats having increased avenanthramide concentration through germination treatment. Oats are first enhanced or induced by secondary dormancy and then germinated for up to 5 days at the evaluation temperature. Manufacture of food, feed, nutraceutical or personal care products and ingredients by drying, further processing or harvesting germinated but not germinated oats. This manufacturing method also provides dormancy to random non-dormant oats and is suitable for germination treatment.
