abstract | The present invention relates to a composition for preparing gluten-free rice flour containing indigestible maltodextrin and a method of preparing the same, wherein the composition comprises 3 to 10 parts by weight of indigestible maltodextrin based on 100 parts by weight of the composition excluding water, 15 to 20 parts by weight of buckwheat flour 15 To 20 parts by weight of potato starch, 12 to 18 parts by weight of potato starch, 1 to 5 parts by weight of xanthan gum, 12 to 18 parts by weight of egg and 1 to 2 parts by weight of salt, more preferably, 5 to 7 parts by weight. Therefore, instead of adding flour or gluten to rice flour, ovariectomatous maltodextrin can be added to improve α-amylase and α-glucosidase inhibitory activity to suppress the increase of blood sugar and improve the texture of rice flour after cooking. |
