abstract | According to the present invention, a collagen casing filled with Korean sausage compositions is formed by alternation of unit backs and nodes, so the Korean sausage is formed in a row shape in order to hygienically store the collagen casing for a long time and be conveniently supplied to customers in a distribution process. Moreover, since a blade touches only the node of the collagen casing, contact of the blade is maximally prevented, so the Korean sausage is hygienically provided. According to the present invention, a method of manufacturing Korean sausage by unit packages including multiple Korean sausages, which is manufactured by the collagen casing to maintain the unique flavor of various kinds of Korean sausages, such as vegetable Korean sausage, rice Korean sausage, glutinous rice Korean sausage, fresh Korean sausage, meat Korean sausage, and Cirsium setidens Korean sausage, so as to be provided in a row type, comprises the following steps of: (S100) preparing and mixing Korean sausage materials to prepare Korean sausage compositions; (S200) preparing a collagen casing (c) as the skin of Korean sausage; (S300) filling the Korean sausage compositions into the collagen casing (c), and twisting the collagen casing (c) filled with the Korean sausage compositions once to five times to manufacture the Korean sausage formed by alternating a unit bag (c1) filled with the Korean sausage compositions and a node (c2) not filled with the Korean sausage compositions in middle places along the longitudinal direction of the collagen casing (c); (S400) heating the Korean sausage; and (S500) cooling the heated Korean sausage. |
