abstract The present invention provides vinegar of Moringa oleifera and a manufacturing method thereof, the method comprising: a step (A) of harvesting and washing leaves of Moringa oleifera, and preparing tea of Moringa oleifera; a step (B) of preparing persimmon vinegar; a step (C) of inserting the tea of Moringa oleifera of the step (A) into a cotton bag, inserting the cotton bag into a fermentation vessel, and pouring the persimmon vinegar of the step (B) into the fermentation vessel to immerse the tea of Moringa oleifera in the persimmon vinegar; a step (D) of aging the persimmon vinegar immersing the tea of Moringa oleifera of the step (C) for 40 to 50 days; and a step (E) of separating vinegar of Moringa oleifera when aging of the step (D) is finished. Thus, since the vinegar of Moringa oleifera contains excellent nutrients and functional components, Moringa oleifera very useful to modern persons can be easily taken, so an effect helpful to national health and food industries is provided.
