abstract | The object of the present invention is to provide a seasoning composition which is safe for human body, has an excellent sweet taste and a first taste, and can be used without any problem as a substitute for an animal protein hydrolyzate. A solution to the problem is a seasoning composition containing a yeast extract obtained from a yeast cell cultured under favorable conditions for alanine production, wherein the seasoning composition contains free alanine in an amount of 20% by weight or more based on the free amino acid. |
