abstract | The present invention relates to a method for manufacturing a persimmon leaf fermented tea comprising the steps of pretreating persimmon leaves, inoculating monosaccharide or Aspergillus sp. Germ as seed germs into the pretreated persimmon leaves and fermenting them, and drying the fermented persimmon leaves to provide. The fermented tea of the persimmon leaves according to the present invention may exhibit various functionalities such as cholesterol lowering activity or antioxidative activity by increasing useful physiologically active substances such as monacolin K, polyphenol or flavonoid by microbial fermentation. Therefore, when the fermented tea of the persimmon leaves according to the present invention is drunk with hot water or the like, it is advantageous to maintain or improve the health of the tasting person. |
