abstract The present invention comprises the steps of (a) spraying hot water on the fresh ginseng to gelatinize the skin of the fresh ginseng; (b) drying the fresh ginseng; And (c) provides a method for producing red ginseng with the fuselage cracks are suppressed comprising the step of increasing the dried ginseng. The present invention provides a novel method for producing high-quality red ginseng, in which fuselage cracking is greatly suppressed. According to the present invention, it is possible to provide a high-quality red ginseng having not only suppression of fuselage cracking of red ginseng but also white skin phenomenon and color almost the same as those of conventional red ginseng. There is an advantage that can be carried out through a simple facility without the additional chemical treatment of the present invention.
