titleOfInvention Fermented milk production method and fermented milk
abstract Fermented milk production method in which fermentation is promoted without using a fermentation promoting substance or the like; And the novel fermented milk prepared by the above method, having a denseness and mildness that does not appear in the prior art products, has a firm structure in which the tissue does not collapse during distribution. The study found that fermentation efficiency can be increased by replacing it with an inert gas to reduce the dissolved oxygen of the fermented milk raw material at the start of fermentation. In addition, it has been found that fermentation at this state at normal temperatures provides a fermented milk preparation that shortens fermentation time to achieve increased productivity, while fermentation at lower temperatures than conventional is a low temperature of the prior art at normal fermentation time. It has been found that novel fermented milks with solid textures that do not disintegrate in the distribution stage, which are superior to those obtained in long-term fermentation, have a dense and mild flavor, and have found that such fermented milks are provided in this way. Based on this finding, the method and fermented milk were completed.
