abstract | The present invention relates to an anthocyanin derivative having enhanced structural stability and a method for synthesizing the same, and more particularly, to extract anthocyanin crude extract from black soybean seed, and concentrate the water layer obtained by fractionating the anthocyanin crude extract with water and ethyl acetate. The present invention relates to an anthocyanin derivative synthesis method and anthocyanin derivative comprising the step of obtaining anthocyanin extract and then separating pure anthocyanin and derivatizing the separated anthocyanin. According to the present invention, anthocyanin derivatives having enhanced structural stability can be synthesized with high purity and high efficiency in a short time, and can be applied to various fields to which anthocyanins can be applied, as well as to fields in which anthocyanins cannot be applied due to their weak structural stability. The effect can be obtained. |
