abstract The present invention relates to compositions having anti-inflammatory and immunomodulatory activity containing sweetfish proteins and peptides and methods of extracting the same. More specifically, it inhibits the production of nitric oxide (NO) and cytokines (tumor necrosis factor (TNF) -α, IL-6, IL-1β) and prostaglandin E2 (prostaglandin, PGE2) as inflammatory response factors. , INOS, a protein that regulates the production of cytokines and nitric oxide, and cyclooxygenase (COX-2), a mediator of the inflammatory response. Has the effect of regulating the function of macrophage. Sweetfish proteins and peptides of the present invention provide compositions useful for the prevention and treatment of diseases caused by inflammatory immune responses.
