abstract | The present invention relates to a novel process for the stabilization of aqueous deacylation reactions through the use of buffers in the preparation of sucralose. The present invention provides a method for preparing sucralose from an acyl-sucralose compound, whereby the acyl-sucralose compound is deacylated in the presence of a buffer that stabilizes the pH of the feed mixture and reduces the accumulation of undesirable anhydro compounds. . The present invention also provides a process wherein the acyl-sucralose compound is directly deacylated before or after removal of the tertiary amide reaction carrier from the neutralized chlorination feed mixture. An aqueous solution of sucralose comprising salts and other compounds is prepared, from which sucralose is recovered by extraction and purified by crystallization. |
