abstract | The present invention provides a method for preparing diglycerides comprising a reaction of removing fatty acid or lower alkyl esters thereof with glycerin under immobilized partial glyceride lipase out of the system. The reaction is preferably terminated at an acid value (AV) of the reaction mixture which satisfies the following range: 50R-60 > AV > 70R-150 (AV > 0).n n n According to the production method of the present invention, it is possible to efficiently prepare high-purity diglycerides without impairing lipase activity under reduced pressure. The preparation method of the present invention is effective without being affected by variables of reaction conditions such as fatty acid / glycerine ratio, reaction temperature or enzyme concentration.
