The present invention relates to a method for preparing a fractionated physiologically active concentrated fraction of a specific molecular weight by size by filtration and fractionation by a specific low molecular weight size through filtration. The black garlic of the present invention is expected to be applicable to various uses as a sanitary and long-term preservation as well as low molecular weight, while maintaining the active ingredient, as well as low molecular weight.
