titleOfInvention Manufacturing Method of Tofu Products Using Deep Sea Water with Chitosan
abstract The present invention relates to a method for manufacturing tofu products using deep seawater to which chitosan is added. More specifically, the tofu products of the present invention using chitosan added to deep sea water of 650 m in depth are used for general inorganic salts, middle water and deep sea water. Since it shows an excellent effect, such as higher strength and elasticity, improved storage properties than tofu prepared using the tofu can be produced a functional tofu of excellent quality using the deep seawater added chitosan from the manufacturing process of the present invention.
