abstract The present invention provides a cruciferous plant pigment having no odor (odorless) or significantly reduced (odorless) derived from a cruciferous plant, and a pigment preparation containing the dye. The present invention also provides a method for producing such odorless or odorless cruciferous plant pigments. When such a pigment | dye is color value: E10 % 1cm = 80, adsorption treatment, ion exchange treatment, acid treatment, or the like with respect to the adsorption treatment liquid of the cruciferous plant pigment extract so that the contained fragrance component concentration may be 100 ppm or less.
