It relates to Meises StarKe KDM 1, a method for preparing them, and a method for using the enzyme in the preparation of sugar.n n n Enzymes prepared from the microorganisms of the present invention facilitate the process by decomposing the dextran and starch present in the crude raw sugar production of sugar cane or sugar beet, and prevents additional cost loss by lowering the content of dextran in the raw sugar.
