abstract | The present invention relates to a method for isolating protease inhibitors derived from sticky eggs, and to obtain crude extracts of sticky eggs and to separate them in several steps through ion exchange or gel permeation chromatography. By separating and purifying in a single step with a column, it is possible to provide a separation method that reduces the time required for purification and yields higher yields, as well as by using the protease inhibitor separated and purified as described above. There is a very excellent effect that can effectively inhibit the heat-resistant protease that can cause the degradation of fish meat. |
