abstract | The present invention relates to an ultra high pressure sterilization apparatus and a method of using the same, in a method of processing or sterilizing a raw material of a food, and more particularly, an ultra high pressure composed of a main pressure device, a pressure intensifier, a water supply device, and an air supply device. By applying super high pressure to agricultural products such as shellfish, crustaceans and fruits by using sterilizers, shells and meats are easily shelled or peeled off, so that mass work can be done quickly and safely. Ultra-high pressure sterilization, characterized in that the processed water and livestock products are used for the transformation of food produced by pharmaceutical treatment or heating method without affecting the transformation of food by the ultra-high pressure, and for the extension of food sterilization and preservation period.
