The products by the process according to the invention are suitable as additives for human food and animal feed, in particular stable to oxidative degradation and thermal decomposition, and in particular have a higher content of L-ascorbic acid monophosphate than polyphosphates. Preferred for use primarily for nutritional supplementation of fish food.
