abstract The present invention relates to a vegetable protein whey, a whey protein enriched with aglucon isoflavone, and a method for recovering and producing the same. Vegetable protein whey enriched with aglucon isoflavone is a beta-glucosidase enzyme or esterase that is sufficient to convert a whey containing glucon isoflavone to at least a majority of the glucon isoflavone to aglucon. It is prepared by treating with enzymes, or acids, to provide a rich whey of aglucon. Recovery of the protein yields a whey protein enriched with aglucon.
